Gajar(Carrots) Ki Barfi

“Gajar ki Barfi” is basically an extended product from very famous & richly nutritious desert called “Gajar Ka Halwa” which was originated from North India & Pakistan during Moghul Dynasty.
Ingredients used for preparing “ Gajar ki Barfi” are; Gajar(Carrots)-750 grams, Milk-1.5 litre, Sugar-250 grams, Elaichi Powder-1 pinch,Khoya-150 grams, Almond & Cashew Nuts cut-pieces-40/50 grams.
The basic methodology; Cut the Gajar in thin chip-pieces preferably using Kaddukas available in Indian home-kitchens. Then gajar chip-pieces and milk to be heated up in a pen, until the milk appears to have dried –up leaving a concentrated mix.Add 200 grams of Sugar to it and continue heating, until the sugary –mix also appears to have become concentrated. Add the pinch of Elaichi Powder at this juncture and take the mixture out of the pen. The mixture taken out should be put in a wide plate with ghee spread out on its flat surface. The mixture put in the plate is also to be spread –out and left to get cool down. Now, put the left over khoya in the pen along with left over sugar and heat it up till it takes a concentrated form. Thereafter, spread this Khoya –Sugar mix in a layer form on top layer of already spread Mixture in the flat plate. Then spread the almond & cashew nuts cut pieces on the top layer of the mix and after some time, cut the spread into desired square-shaped pieces using a suitable sweet –cutter or knife. The Gajar-ki-Barfi is ready to be served.
