Renu Goel’s Dahi-Puri-Chaat(Curd-Snack)

Dahi –Puri-Chaat is a street food, very popular across India except interiors of southern part of the country. It is believed that the Dahi- Puri Snack (also called goalguppas) originated from Mumbai and it was very soon adopted by residents of Delhi, at a time close to middle of 19 th century.
Ingredients;Suji-100 grams, Refined oil-3 Tea Spoons, Curd-suitable quantity, Separate refined oil for puri frying, Boiled Potatoes, Boiled Grahams or Chholas, Roasted Jeera(Cumin Seeds),Salt –as per taste, Red Chillies Powder-as per taste, Black Salt Powder, Green Chutney, Sonth(Sweet Chutney).
Procedure for cooking the Puris is; Take Suji and wet it in boiled water for 2 minutes or until it loses its heat. Than Mash it well using your palm after mixing 1 tea spoon refined oil into it. Repeat the process further two times. The mashing process is important to make mixture worth delivering proper puris and process should be continued for 5 minutes. Then make small round balls of wet & mashed up Suji and fry them in refined oil to converting them into puris, as per regular Puri cooking process. The Suji balls must be fried in medium hot refined oil till the Puris bear light brown colour.
Procedure for Chaat Preparation; Pour little salt as per taste in 2 separate bowls containing Boiled potato pieces and Boiled Grahams /Chholas .Puncture the Puris in centre and place some small pieces of boiled potatoes and boiled grahams into the centre-holes resulted from punctures. Put 8-10 Puris in a plate and pour curd over the Puris creating a kind of layer. Then pour green chutneys and sweet chutneys on the curd layer, in quantities as per taste. Then spray salt, black salt, roasted jeera powder and red chillies powder on top layers of Curd/Chutneys. The Dahi-Puri-Chaat is ready to be served.
