Renu Goel’s Kurkuri-Bhindi(Fried Ladies’- Finger)

Bhindi is a popular vegetable from Indian Subcontinent, cooked and relished almost throughout India as part of traditional Indian meal. Out of many forms of Bhindi cooking one of the most preferred forms is Frying of Bhindi and end product is called Kurkuri Bhindi.
Kurkuri Bhindi is eaten as vegetable part of an Indian meal as well as a starter /snack.
Ingredients; Bhindi(Lady Fingers)-500 grams, Besan (Graham flour)-2 Table Spoons, Dhaniya( Coriander Powder)-2 Tea Spoon, Salt as per taste, Rice Flour-1 Table Spoon, Haldi(Turmeric Powder)-1 Tea Spoon, Red Chillies Powder-1 Tea Spoon, Lemon Juice-1 Medium Size Lemon , Refined Oil-1 Tea Spoon,Garam Masala-1 Tea Spoon.
Procedure for cooking; cut each bhindi longitudinally in 4 pieces and put the entire cut stuff in a wide & open utensil. Now put Besan , rice flour, salt, turmeric powder, red chillies powder, lemon juice, Dhaniya Powder and Garam Masala into it. Thereafter pour the refined oil in the entire mixture. Mix all ingredients very well and leave the entire mix for 2 –minutes.
At this juncture start heating refined oil and once the same is heated up ,the bhindi-mixture kept ready should be fried into it.
Special Precautions required in this cooking;
Never mix water while preparing bhindi mixture for frying process. If you feel to bring in more moisture, pour some lemon juice /refined oil into the mixture.
The temperature of refined oil during bhindi –frying process should be fairly high and not low or medium.
When taking out the fried bhindi lot from frying pen, it is suggested to put the same over a tissue paper, already put in the wide plate in which the fried bhindis are being kept.
In case you wish, you can spray some chaat masala over fried bhindis for an added punch to the taste of kurkuri bhindi.
The kurkuri Bhindi is ready to be served.
