Renu Goel’s Sweet Boondi

“Sweet Boondi” is originated from Rajasthan in India. It’s difficult to find the time of its origin, but this basic sweet has been very popular in all Indian Communities in urban and rural areas, since few centuries ago. It seems the birth of Boondi took place more in the form of sweet to be offered to God in temples during Bhog activity and then is distributed amongst devotees and people as God’s Prasad. Sweet Boondi is also offered in form of famous Boondi- Laddus, which are a very popular sweet specially offered to guests in all Indian Weddings.

Ingredients used for preparing “ Sweet Boondi” are; Besan(Gram Flour) -200 gms, Sugar-200 gms, Dry Fruit Cuts(Cashew Nuts & Pista),Baking Soda-1/2 th tea spoon, Refined Oil for frying according to the size of Pan.

Methodology; Create a concentrated mixture of besan by mixing it with water and for ensuring consistency watch the recipe’s video at Renu’s Kitchen Expresso i.e. Renu Goel’s U-Tube Channel. Thereafter add ½ tea spoon baking soda to the mixture. Leave the mixture for 10 minutes. In a pan heat up sugar & water mixture to create concentrated sugar syrup. Take down the sugar syrup pan from gas burner, little before the development of threads in the sugar syrup. Now in the other pan start heating-up the refined oil and when it is medium hot, the concentrated mixture of besan should be poured in hot oil, passing the mixture through the holes of a Kaddukas. The besan mixture should not be a dilute one, as the dilute mixture will not allow the formation of mixture into boondi. In the medium hot refined oil, when boondi starts becoming brownish, take it away from pan and pour into another pan having sugary syrup in it. Leave the boondi in sugar syrup for 4-6 hours and keep it agitating a little in between to ensure that boondi does not form inseparable pile-ups. Then take the boondi out from pan and put it in a large plate. Mix some dry fruit cuts with it and Sweet Boondi is ready to be served.
