Renu Goel’s Sandwich- Paratha

History of Sandwiches & Parathas;

The real story of birth of sandwiches is as interesting as is popularity of sandwiches in today’s food -world .Over 300 years ago; sandwich was accidentally popularized by a person named John Montagu, who lived in England. In 1760s, the legend had it, as most of the historians from the field of food did agree that Montagu was a gambler, who spent most of his time on gamble table. Naturally, the guy felt hungry at routine hours and might have felt even hungrier to eat something to feed his psyche for regaining his confidence for next move, whenever he lost a move in the process of gambling. During these long hours on gambling table, he would continuously ask the house cook to give him something that he could eat without getting –up from his seat or discontinuing his gambling moves and that is how the sandwich was born. Montagu’s creation probably must have taken- off quickly, as just a few months later a man called Edward Gibbon wrote in his diary about the stuffed light meals those were being eaten by Montagu, were also being sold by the same cook who fed Montagu, to another 20/30 men of Kingdom (UK), using the word “Sandwich” to describe the stuffed light meal.

As regards Parathas, they were born from the land of undivided Bengal (Now divided into west Bengal of India and a separate country called Bangladesh) in 16 th century. Cooks in King’s Kitchen during Mughal Empire used to cook them for the King and his Ministers using whole –wheat flour, Rich –Ghee, chopped onions, chopped green chilli & green coriander leaves and pepper. The Paratha thus cooked became popular over time as Mughlai Paratha and got converted into different Paratha forms that were easy to cook for Indian, Pakistani & Bangladeshi women in their household environment.

Ingredients used for preparing “Sandwich -Paratha”;

Parathas of wheat flour -3 Nos.( preferably in Square Shape ) Boiled Potatoes-2 of medium size, Tomatoes -2 (Medium Size), Onion -1 (Medium Size),Capsicum-1, Cucumber-1,Black Chilli Powder-1/4 th tea spoon, Green Cutney-2 Tea Spoon, Tomato Catch Up -1 tea spoon, Green Pudina leaves-8/10,Cheese –Quantity as per taste, Salt-As per taste

Methodology;

Take one paratha and put a well spread –layer of green chutney in its top surface. Now cut out round shaped slices from boiled potato and put on the top of paratha above the green chutney layer. Also put round slices of tomatoes, onion and cucumber on top of boiled potato slices in the same way. Then pour cheese chopped in into thin threads like shape using Kaddukas on the top of all veg-slices. Then sprinkle salt and black chilli powder over it.

Now take another Paratha and put a well spread layer of tomato catch up over its top surface. Now take 3rd paratha and put well spread green chutney layer on its top surface. Now put up, second & third paratha over the top of the first paratha. Now cut the whole stuff by a Pizza Cutter into 4 equal squares and serve the same with separate green chutney and tomato catch up in the platter.
